Our Story

The Saffron Factory is an indoor saffron farm in Jonesboro, Georgia.

Saffron is the most expensive spice in the world. Almost all of it is grown overseas, in fields, by hand. We're trying something different: growing it indoors, under controlled climate, right here in Georgia.

Why saffron

I'm Chef Rod, AKA the Red Gold Kingpin, founder of The Saffron Factory. Most saffron sold in America is imported, and most buyers have no way to check what they're paying for. I wanted to change that by growing it here and showing the work.

Saffron comes from a crocus flower that blooms once a year. Each flower gives three red stigmas, picked by hand. It takes thousands of flowers to make a few grams. That's why it's priced like gold, and that's why we call it red gold.

How we grow it

Our crop grows on an eight-layer vertical stack inside a climate-controlled grow room. We manage temperature, humidity and light for each stage of the plant's year, and we use thermal imaging to watch how the plants respond.

Our first crop is in the ground now, and we expect the first harvest in late 2026. You can watch the whole process, including the parts that didn't work. We publish the failures too, because it's the only way the successes mean anything.

Why we publish the lab work

Saffron is one of the most commonly faked foods in the world. We think you should be able to check what you're buying. We send samples to the University of Georgia for independent analysis and post the results on our site, free to read, no purchase needed.

The soil analysis behind our first crop is already published. The analysis of the threads themselves will go up before our first harvest ships.

The candles

While the crop grows, we make candles. Each one is hand-poured in small batches in Jonesboro, with real saffron threads set into the wax by hand. Until our own harvest is ready, the threads are carefully sourced. When our saffron comes in, it goes into the tins, and we'll say so plainly when that happens.
